Old Fashioned Peanut Butter Cookies

If you can't do nuts.... look away!
I LOVE peanut butter. I needed a cookie that was basic but amazing. I always remember nutter butter from the good ol' gluten days. Ah... the memories. It is here, your peanut butter cravings will be fulfilled.... or so I hope. Give it a shot and tell me what you think.
Old Fashioned Peanut Butter Cookies
1 cup of softened unsalted butter
1 1/2 cups of peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 tbsp vanilla
13.2 oz Melly Belly flour blend
1 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
Sugar (for top of cookies)
Preheat your oven to 350 degrees. Line a cookie sheet with parchment and set aside.
In a mixing bowl, place your butter, peanut butter, sugar, and brown sugar and mix well until fully incorporated. If you are using all natural no sugar added peanut butter, you may want to increase your sugars a bit if you prefer. Next, add in your eggs and vanilla. In a separate bowl, measure out your flour, baking powder, baking soda, and salt. Add half of this mixture into your wet ingredient's. Give it a good mix, and then add in the remaining dry ingredients.
Mix it for about 2 minutes. Turn off your mixer, and then scrape down the bowl with a rubber spatula. Turn on your mixture again until well incorporated.
Using clean hands, you want to form one inch balls of dough. It will be sticky at first but it comes off after you keep rolling in your hands. Next, dip one side of your ball in sugar and place that side up on your cookie sheet. Take a fork and press your cookie down on one side and then the other side to form the criss cross pattern and also flatten your cookie for baking. Repeat with all the dough.
Bake for 11-13 minutes until lightly browned on the edges. Pull your cookie sheet out of the oven, and let your cookies rest for 3-5 minutes on the pan before moving them to a cooling rack.
