Turkey Burger Salad

This year has been so chaotic, and I have missed having the chance to connect with you all whether its via Instagram, here, or email. Thank you for being patient even if I only post 2-3 times a year. I want this to be a hub of ideas and creativity, even if it sits and lingers for years.


One of the things I'm proud of myself for this year, is putting my health back on track. I may not be intensely working out, tracking calories, or being consistent 24/7 (we all have our rough days), but I'm acknowledging that my mind is connected to how I treat my body. Rough days were cause for eating my feelings- which led to ongoing depression/anxiety, and that's not good with chronic illness and autoimmune disease. I'm happy to say I have already lost around 20 pounds, and I'm starting to get enough energy to go on more walks and even do a little self-care here and there. The journey is not over! I have more to go.


With this new mindset, I have been able to get my kiddo to eat differently as well. Never has she embraced a salad as she does now. Today I made a burger salad. She was hesitant at first but then inhaled it.


Turkey Burger Salad

  • 2.5 lbs ground turkey

  • 2 Tb olive oil

  • 1 tsp flakey sea salt

  • 1 tsp garlic powder

  • 1 tsp Lawry's seasoning

  • 1 tsp onion powder

  • 1/2 tsp smoked paprika

  • 1/4 tsp cayenne pepper

  • Chopped iceberg lettuce

  • Chopped tomatoes

  • Thinly shredded cheddar jack

  • Diced onions

  • Sliced Kosher Dill Pickles (Trader Joes)


Big Mac Dressing:

  • 1/2 Cup Kewpie Mayo

  • 1 Tb yellow Mustard

  • 2 Tb Ketchup

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 tsp white wine vinegar

  • 2-3 Kosher dill pickles from Trader Joe's

  • Splash of brine from the pickle jar


Start by making your dressing first. I put all the contents of my dressing in a Nutri bullet, zapped it, then put it in a Tupperware and set it in the fridge while I made my turkey.


For the turkey, start by heating a pan with your olive oil. Once nice and hot, add your turkey meat, salt, garlic powder, Lawry's, onion powder, paprika, and cayenne. Mix it up and break it apart until it is fully cooked and lightly brown. Once cooked, set it aside for 5 min.


Next, assemble your salad. I liked mine with iceberg lettuce, tomatoes, onions, sliced pickles, and cheddar jack. Next add the turkey (as much as you need) and then drizzle your dressing on top!


My kiddo got creative and added an extra crunch to hers by adding some crumbled tortilla chips. This recipe serves a few people, but may not last long if your kiddo goes for 2nds and 3rds like mine :)
