Double Chocolate Brownies

Happy Halloween everyone! This is one of my favorite times of the year, where we just go all out and watch the kiddos have fun. I hope you all enjoy your day.
One of Melly's favorite halloween treats are brownies. Nothing too fancy. Over the years, I have tried bakery GF brownies and they are either bricks or just really grainy. If you haven't already, I highly encourage you to take advantage of my GF Flour Blend post that I reference in most of my recipes. This mix, that you can make at home on your own, is the perfect blend and does not leave the goodies grainy at all. The Melly version below has dark chocolate chips for a yummy surprise but feel free to add in nuts, or different flavor chips if you wish.
Double Chocolate Brownies
1 1/2 cups of sugar
3.6 oz of Melly Belly Flour Blend (or any other GF flour you wish to try)
1/2 cup of unsweetened cocoa powder
1 tsp of salt
1/4 tsp of baking powder
3 eggs
3 TB milk of your choice
1 tsp of vanilla extract
1/2 cup of melted butter
1/2 cup of dark chocolate chips
In a stand mixer, start by adding in all your dry ingredients (sugar, flour, cocoa, salt, and baking powder). Next add in your eggs, milk, and vanilla and mix on medium for about 2 minutes. With a rubber spatula, scrape down the sides of your bowl to make sure nothing is stuck. Add in your melted butter and mix again for another minute. Stop the mixture and scrape down the sides once more and then mix again until the mixture looks creamy and smooth with no lumps. Add in your chips and use your spatula to mix them in to your batter. Grease a pyrex. I like using an 8 x 11.5 pyrex but you can use a 9 x 13 or 2- 8 x 8 pyrex. Depending on the size of your baking pans, you can have thinner to thicker brownies. It's really your preference.
Preheat your oven to 350 degrees and let your brownie mix sit in your pyrex while you wait. I like doing this because in some recipes it's better to wait for the flour to soak up the liquids. Remember that GF flours are usually thirsty, so this will give it a chance to really soak it all in to get moist and fluffier brownies.
When ready, put your brownies in the oven and cook for 30-35 minutes until your brownies are set and a toothpick comes out clean when you poke it in the middle.
Once done, set your brownies on the counter and let them cool for at least 30 minutes before cutting them. Top with powdered sugar and ENJOY!
